Air Dried Lamb
Serves 4
Ingredients
1 pack of McGeough's air dried lamb
125g rocket salad
100g soft goats cheese
25g garlic sprouts
25g black cress
10g tomato chutney
3 poached pears
8 slices of blue cheese
12-16 slices of Mc Geough`s air dried
Beef
Method
Mould goat’s cheese into circles and
bake in oven for at 150C for 6 min.
Arrange McGeough's air dried lamb
around baked cheese. Place rocket
salad, garlic sprouts and cress over
baked cheese. Dress lamb with tomato
chutney. Serve and enjoy!
Air Dried Beef
Serves 4
Ingredients
8 half slices of French brioche
3 poached pears
8 slices of blue cheese
12-16 slices of Mc Geough`s air dried
Beef
Method
Slice brioche thinly.
Poach pears in sweet syrup and then
finely dice.
Place the diced pears on top of brioche.
Place blue cheese on top of pears place
in warm oven for 2 minutes, then present
4 slices of beef flat on plate and place
brioche on top of beef and serve.
Air Dried Pork
Serves 4
Ingredients
1 pack air dried pork
100g white coco beans
2 shallots, finely diced
20g mayonnaise
4 leaves basil, tomato, oil
Method
Soak coco beans for 24 hours, and then
boil for 40 min. Sauté diced shallots and
add to beans. Place beans on plate
Chop basil and add to mayonnaise.
Arrange basil mayonnaise on plate. The
arrange slices of pork on plate. Serve
and enjoy
